Stuffed Breakfast Avocado!

Ever Seen an egg poached inside of an AVOCADO & thought "YUMMMEHHH?!"... Yeah, me too! So here is my version of it!



Half of an avocado
2 Slices of cooked & chopped bacon
1 Lemon or Lime wedge
1 Egg
1 Slice of an onion finely chopped
Shredded Cheddar Cheese

 So here's what I did!...
Hold your half of an avocado in one hand while you take a knife and gently cut vertical, horizontal & diagonal slices into it. Be sure not to cut the skin of the avocado. Your slices should only graze the inside of the avocado skin. Scoop out a little extra avocado where you removed the pit, to make room for your egg. Squeeze lemon or lime juice into your avocado gently squeezing & moving the outside of the avocado skin in your hand to allow the juice to reach the bottom of your slices. Salt, pepper & season your avocado.

Place your diced onion & bacon inside & all around your avocado. Don't forget to get some in between your sliced hash marks! Gently drop your egg into the whole you made, sprinkle a little extra seasonings on top, sprinkle your shredded cheddar & VOILA!!!





I baked my avocado at 350 for about 10minutes & then finished in the broiler because I enjoy a soft yolk. I would suggest you cook your avocado for the amount of time that will make you & your yolk the happiest! lol

Stuffed & Baked Avocado (with Salmon)

Today is all about the fabulous, fibrous, filling & fatty AVOCADO!!!

Here is one of my favorite Avocado meals that I experimented with one day & ended up quite pleased!

Ingredients:
1 Large Avocado
1/2 Cup  Fresh Parsley
1 Lime, juiced
1 Lemon Wedge, juiced
2 tbsp Grated Parmesan or Romano Cheese
1-2 Cloves of garlic minced
2 tbsp of finely diced Onion
4 oz of Lox/Smoked Salmon chopped
About 8 Cherry Tomatoes, halved
A Dash of Cayenne Pepper
A Dash of Cumin
A Dash of Salt
1 pkg of Stevia
Shredded Cheddar Cheese

Cut your avocado in half & remove the pit. Cup half of one avocado in your hand & gently cut horizontal, vertical & diagonal slits through each avocado half, being careful not to pierce the skin of the avocado. Your knife should be gently grazing the skin of the avocado from the inside. Then take a spoon and gently scoop out the inside of your avocados into a bowl. Add all of the above ingredients to your mixing bowl except for the Shredded Cheddar Cheese. Gently mix all of your ingredients with your finger tips taking care not to smash the avocado pieces. Once the ingredients in your bowl are thoroughly mixed, divide ingredients in half & pack back into your two avocado skins. (your avocados will most like be overflowing with yummy stuffing & that's just fine!) Place your stuffed avocados on foil or in a baking dish & then coat with your shredded cheddar cheese! It's ok to use your hands & press the cheese into the sticky filling to fully cover the top of your masterpiece! Bake at 350 for 15 minutes & then finish in the broiler for a gooey, slightly browned cheesy top!

You are a wonderful upgrade from cheese! & that's major because I was once in a platonic relationship with cheese!

You add texture & creaminess to smoothies & desserts so that my "good" days can feel delightfully sinful!

You are always there for me when I need you! When I need a break from Egg or when he has run out on me, I can always rely on you because you will do his job just as well & help me along with any of my baking!


You allow me to indulge in rich, chocolatey icecreams & puddings without ever judging me or being concerned that I might be overdoing it!

You are filling, satisfying & never leave me wanting more!

You keep me regular! ....errrrk.... record skips, pump the breaks, double take!... SAY WHAT?!
Ok, the love letter is ruined! Now on to the serious stuff!...

So I am in no way a professional on any topic, but I do read & everything I have ever read about avocados tells me that I need to have them in my life! Besides claims that they lower cholesterol, help prevent diabetes, heart disease, stroke & cancer, they are also a healthy fat! Healthy fats allow your body to rid itself of the fat it is holding onto in case of the Apocalypse! You know, those fats that are stored in your muffin top, in cute little dimples in your thighs & in nicely packed back storage containers for ease & convenience are all there in case you need them one day! As pleasant as that sounds, you won't need extra storage to hold onto those fats if your body starts realizing that you are going to give it a healthier, more nutrient rich version of that fat on a regular basis!!!... At least this is my take on how healthy fats work!
