Loaded Guacamole! Party Sized!

Party Sized Loaded Guacamole!
*please adjust recipe accordingly for smaller group!


Ingredients:
5 Ripe Avocados
2-3 Limes
1 Cup Cilantro
4 Large Garlic Cloves
1 Can Corn (drained)
1 Can black beans (drained & rinsed)
1 Medium Red Onion
1 Medium Tomato
1 Medium Red Bell Pepper
2 PreCooked Chicken Breasts Chopped
8 Strips of Cooked Bacon or Turkey Bacon Chopped
1 tsp ground Coriander
1 tsp red pepper flakes
*Aloe- Optional (I add a piece of fresh aloe about the size of my thumb to most guacamole that I make for large groups after reading about Aloe's ability to preserve fruits & vegetables. This in my opinion keeps my guacamole greener, longer!)
Salt
Add chopped cilantro, peeled garlic, coriander, red pepper flakes, 1tsp of salt to your mixing device of choice. I prefer using my Cuisinart smart stick mixing cup or my Molcajete which is basically a stone mortar and pestle.

Then add Lime juice (& Optional Aloe) to the paste you have created and mix. (mix very thoroughly if using aloe because it takes a bit of effort to make the aloe gel break down and disperse evenly)
Cut all of your ripened avocados in half, remove pits and scoop out the inside into a large mixing bowl.

The next step requires you smashing your avocados to your desired consistency. Traditionally this is done in a molcajete or a mortar & pestle but no one will judge you when you are at home alone smashing them up with a fork, a potato smasher or putting them in your blending device!

TIP: if using a blending device you may want to blend half of your avocados smooth and creamy and half of them chunky for a perfect consistency when mixed together!

Combine your Avocado mix & your seasoned lime juice thoroughly & then give it a taste!... I personally prefer my guacamole loaded with garlic & lime! I have found that when you make a guacamole for parties extra seasoned you will turn people who swore they hated guac or avocados into avid loaded guac lovers! If your guac is slightly too seasoned or slightly too salty at this stage, this is a good thing because you have a lot of ingredients to still add that will disperse that taste!

NOTE: I now add Coriander to my salsas & guacamole as my *secret ingredient* ever since my hubs and I fell in love with a store bought salsa that was called "Tequila Lime" Salsa... We wondered what earned this special salsa its name & the only ingredient it contained that was not typical of your average salsa was, You guessed it! CORIANDER!

Now for the final step, stir in all of your chopped veggies & meats & Voila!!! Remember to chop down your onions, peppers & tomatoes reasonably small so that they will not be too overwhelming for the party chip dippers who are headed at full speed towards your loaded guacamole because they heard the word "Bacon & Chicken!"

Depending on how quickly you expect this dish to disappear, you may want to put small portions of it out at a time so remainder of the dip may stay fresh, sealed tightly & green!

I like to leave a little bit of my mix-ins on the side to garnish my guacamole at the end, this way everyone can see for themselves what is mixed into this creamy, heaven in your mouth on a chip dish!

Banana Pancakes

The easy, healthy recipe you may have already seen online with some of my own tweaks...

Ingredients:
3 Large Ripe Bananas (Here I used 4 sm-med bananas)
3 Eggs
1 tsp vanilla extract
1 tsp cinnamon
3 tbsp peanut butter
4 tbs whole wheat flour ( can substitute almond, coconut or all purpose flour)
1 tsp baking powder
1 dash of salt

Mix all ingredients with a blender or hand mixer until batter forms.
Let batter sit for a few minutes.
Heat non stick frying pan with coconut oil (may use whatever oil/butter you prefer). I use coconut oil because I like to use quite a bit to cook these babies & it makes them easier to flip! I would suggest not making these pancakes any larger than the palm of your hand since they are primarily banana, the larger the pancake, the harder it will be to flip and the less likely it will hold up when you are moving it around! These "pancakes" are going to be much sweeter than typical pancakes due to the bananas so I would suggest just drizzling them with honey before serving or nothing at all!

One day soon I am going to make this recipe with a little extra flour and drop spoon fulls of batter into a greased muffin pan to make little doughnut snacks for the hubs!... Sounds delish to me!

WARNING: I am not a professional chef! I only do what tastes and sounds right to me! Some of my measurements may be slightly off at times because I do use the "eyeball technique" in combination with common sense!... I mean most of us know what the consistency of pancake batter should be & hopefully would be able to adjust with a little more or less of an ingredient! LOL
    If you have never used a stove, an oven, a blender or typical kitchen appliances, this may not be the blog for you!

Welcome to My First Blog!!!


 

     Here I am, fighting constant battles in this war on fat! I have been fighting this battle for as long as I can remember & suddenly I am truly finding the motivation, the personal artillery & fellow armed militia in this wonderful world of social media! There seems to be a direct correlation between the amount of recipes, food pics & workouts that I post & my success, So HERE I GO!!!

     I am hoping that this will be a place for people to come to find motivation, inspiration, guidance & camaraderie! Too many of us struggle with losing weight, eating healthy, living healthy & simply living life to the fullest for us to think for a moment that we have to do it alone! I am in no way saying that I am an expert at this topic, but I am a fellow struggling individual who has been obese a few times & also fighting to maintain a healthy weight quite a few times in life! I know what is currently working for me, so maybe it will work for a few of you!

    So here is a little of my story... I had been in a car accident in the beginning of 2012 that took me out of work, took my pelvis out of alignment, took my active lifestyle & gave me tons of back pain plus pounds! My most recent war on obesity started February 2013. I weighed 267lbs, was squeezing into tight size 18 jeans & I didn't fully realize how much weight I had put back on after wearing bikinis on my honeymoon in 2010 prior to the accident. While recovering from the accident I tried my hardest to limit calories because I knew that suddenly being so sedentary would kill my waistline & all of the progress I made back in 2010 to fit into a gorgeous wedding dress. Every week I was visiting doctors to try to make progress with the pain I was experiencing and every week I was piling on the pounds! This is when I discovered a new condition I had never been aware of - Hypothyroidism. "GREAT! I'm destined to be obese!" was my first thought! "Oh! I'll just take my daily medicine & the pounds should start to melt off!" was my second thought!... Neither thoughts were correct!

     Fast forward to July 2014 & I've made a lot of progress, hit a few infuriating plateaus, back tracked a few times & wanted to cry for weeks & then picked up again where I left off to keep fighting! I've put on a lot of muscle (which I believe is important in looking fit, feeling fit & losing fat), I've lost 70lbs, I barely ever have back pain & I've reconditioned my knees which were once in terrible shape so that I am now able to jog once again!

    If I haven't lost your attention by now & you continue to follow me on this fitness & health journey of mine, you will see that I currently eat & prepare a lot of low carb foods, I try to keep my body in  Ketosis by following keto recipes as well and I also try to put on muscle mass by weight training because these are the things that work for me! I believe that everyone's bodies' are different and respond to different things & I know from trial and error that watching my carbohydrates & maintaining a very rigorous workout program are the only ways I am able to actually shed pounds. I have done plenty of personal research, counted calories, ate only healthy complex carbohydrates, done full vegan fasts for months at a time amp; nothing works for me the way limiting carbs does if I want to continue losing weight!

     That being said, these are some things I am hoping you will find in my blog in the future!
